The candidate is responsible for the
clinical aspect of resident nutritional care in our 58 bed
healthcare center. This person will implement, organize, analyze,
develop, and coordinate with our food service program in order to
maintain and improve dietary services for our skilled nursing
residents according to ADA, OBRA, Title XXII, County Regulations and
Federal Food Code. All of this is done in consideration and
observance of the Kosher dietary regulations. This FT exempt
position will supervise/schedule all nutritional services team; diet
aides and host/hostesses. Responsibilities include, but are not
limited to: monitoring weights, completing MDS, nutrition
counseling, conducting
nutritional assessments, development, evaluation and revision of
patient/resident care plans, and nutritional needs as necessary.
This position either requires:
1) Registered Diet Tech (DTR) with experience in long term care
preferred, but will consider new graduate who has completed a
clinical rotation in a long term care and/or rehab facility. The
position will work under the direction of a Registered Dietitian
(RD) consultant or,
2) a Registered Dietitian (RD).

Grossmont Gardens--a large retirement community and health care
center in need of a food service director. Seeking a dynamic
leader for a staff of over 65 wait staff and kitchen staff.
The campus is 9 acres and 5 levels of care from independent living,
assisted living to skilled nursing care. There is a central kitchen
to service 7 dining rooms of about 900 meals per day.
Knowledge of Health and Safety Codes and Title 22 Regulations
regarding food service is required. Must be computer
literate and able to manage large monthly declining balance.
Duties include menu planning, event catering, kitchen supervision,
food orders and staff supervision. The position is supported
by Dining Room Manager and Assistant Food Service Supervisor as well
as a Dietary Service Supervisor for the Health Care Center.
Skills/Requirements:
Bachelors degree preferred; 3 years experience in Food and Beverage
management; Dietary Service Supervisor certificate or equivalent is
required. Must be able to teach and train both professional
and non professional staff. Position requires extensive
interaction with senior residents so patience, communication skills,
sense of humor and a love for the elderly are important qualities.
Food safety certificate is also required.
